1 teaspoon cinnamon
1 bay leaf
â teaspoon salt
1 cup shredded carrots
½ cup sliced almonds
½ cup chopped dried figs
1. Cook rice until tender in 2½ cups water to which cinnamon, bay leaf, and salt have been added; remove from heat and cool to room temperature.
2. Stir in carrots, almonds, and figs.
3. Toss with Lime and Sesame Seed Dressing (see Index), but do not add molasses or maple syrup to dressing.
Yield: 8 servings.
Calcium: 31 mg. per serving.
Calories: 139 per serving (excluding dressing).
